Fresh pizza dough balls are crafted with attention to detail using the renowned “indirect dough” method, also known as “impasto indiretto” in Italian culinary circles. This involves creating a pre-ferment, called “biga”, ahead of time for enhanced flavor and texture. Our maestros thoroughly follow the yeast activation in the biga and meticulously time the incorporation of biga into the main dough, maintaining precise temperature control as it rises.
